How It Works

Formula & Methodology
For a 30-minute simmer, the reduction fraction is min(0.006 x 30, 0.5) = min(0.18, 0.5) = 0.18, so 4 cups of starting liquid reduces to 4 x (1 - 0.18) = 3.28 cups of finished sauce. The 0.006 per-minute rate means the reduction fraction reaches its 50% cap at 0.5 / 0.006, or roughly 83 minutes of simmering, and stays at 50% for any simmer time at or beyond that point.
Examples
Standard 30-Minute Batch
Starting with 4 cups of sauce base simmered for 30 minutes, the reduction fraction is 0.18, giving a finished yield of 4 x 0.82 = 3.28 cups.
Larger Batch, Longer Simmer
