About the Canning Time Calculator
The Water Bath Canning Time Calculator adjusts a recipe's sea-level processing time for the added time needed at higher elevations, based on USDA altitude adjustment guidance for boiling-water canning. It is intended for home canners who have a tested recipe's base processing time and need to know how much longer to process jars at their actual elevation. How It Works
Enter the recipe's stated base processing time in minutes, the time specified for sea level, and your altitude in feet. The calculator checks which altitude band your elevation falls into and adds a fixed number of extra minutes for that band, then returns the adjusted total processing time.
Formula & Methodology
The added-minutes figure comes entirely from which altitude band the entered elevation falls into. Since the bands are step ranges rather than a smooth scale, two altitudes just a few feet apart on either side of a boundary, say 2,999 ft versus 3,001 ft, land in different bands and get different adjustments, so it is worth checking your exact elevation carefully near those cutoffs.

A recipe with a 10-minute sea-level processing time, canned at 3,000 feet elevation, falls in the above-1,000-up-to-3,000-ft band and gets 5 extra minutes, for an adjusted processing time of 15 minutes.

A recipe with a 20-minute sea-level processing time, canned at 7,000 feet, falls in the above-6,000-up-to-8,000-ft band and gets 15 extra minutes, for an adjusted processing time of 35 minutes.
