The true cost multiplier then converts that yield percentage into a practical costing tool: dividing 100 by the yield percentage shows exactly how much the raw ingredient's per-pound price needs to be inflated to reflect the real cost of a pound of usable product, since the kitchen is effectively paying for the trim loss too.

A vegetable with significant trim loss
16 oz as-purchased trimmed down to 12 oz usable gives a 75% yield and a true cost multiplier of about 1.33, meaning the real cost per usable pound is a third higher than the raw price tag suggests.
