How It Works

Formula & Methodology
Each tartness level has a baseline duration reflecting how much sugar needs to be converted to acid at a typical 70-79°F room temperature, which is why the multiplier there is exactly 1.0. Above 80°F, SCOBY activity accelerates, so the calculator shortens the estimate by 20%. Below 70°F, fermentation activity slows, so the calculator extends the estimate by 30%. Because the temperature bands are discrete rather than a smooth curve, the multiplier only changes at the 70°F and 80°F thresholds, not gradually as temperature rises.
