How It Works

You enter the total brine volume in cups, the vinegar percentage of that liquid, and how much salt to use per cup of liquid. The calculator converts the vinegar percentage to a decimal, multiplies it by the total volume to get vinegar cups, subtracts that from the total to get water cups, and multiplies the total volume by the salt-per-cup rate to get total salt.

Vinegar (cups) = Total Volume x (Vinegar % / 100). Water (cups) = Total Volume - Vinegar. Salt (tbsp) = Total Volume x Salt per Cup.

Formula & Methodology

First convert the vinegar percentage into a decimal fraction (for example 50% becomes 0.5). Multiply this fraction by the total brine volume to get the vinegar quantity in cups. Subtract the vinegar cups from the total volume to get the remaining water cups, since vinegar and water together make up the full liquid volume. Separately, multiply the total volume by the salt-per-cup-of-liquid rate to get the total tablespoons of salt needed.

Examples

Standard 1:1 brine for a 4-cup batch

At 4 cups total and a 50% vinegar ratio: vinegar = 4 x 0.5 = 2.00 cups, water = 4 - 2 = 2.00 cups, and salt at 1 tbsp per cup = 4 x 1 = 4.0 tbsp.

Milder brine for a smaller batch

At 2 cups total and a 40% vinegar ratio with 0.5 tbsp salt per cup: vinegar = 2 x 0.4 = 0.80 cups, water = 2 - 0.8 = 1.20 cups, and salt = 2 x 0.5 = 1.0 tbsp.
