The Pizza Dough Ball Calculator converts a target pizza diameter into the exact weight of dough you need to shape into a ball, adjusted for the crust style you're making. How It Works
Enter your desired pizza diameter in inches and pick a crust style: Neapolitan, NY style, or deep dish. The calculator finds the pizza's surface area using the standard circle formula, then multiplies that area by an ounces-per-square-inch dough factor specific to the chosen style. The result is shown in both ounces and grams.
Formula & Methodology
To do this by hand, halve the diameter to get the radius, square it, and multiply by pi (about 3.14159) to get the pizza's area in square inches. Multiply that area by the dough factor for your chosen style to get ounces of dough, then multiply by 28.35 to convert to grams for a kitchen scale.
Examples
12-inch Neapolitan
A 12-inch Neapolitan pizza has an area of about 113.1 square inches. Multiplied by the 0.08 oz/in2 factor, that comes out to roughly 9.0 oz of dough, or about 257 grams.
16-inch NY Style
A 16-inch NY-style pizza has an area of about 201.1 square inches. At the 0.11 oz/in2 factor for NY style, that's roughly 22.1 oz of dough, or about 627 grams, nearly two and a half times the 12-inch Neapolitan ball despite the diameter only growing by a third.
